Ricotta [ri-kot-uh]

A soft Italian cheese made from the whey of cows’ or ewes’ milk and cream. Ricotta is delicate, slightly grainy and very dessert-friendly – try with figs and honey – or in a pasta dish, perhaps with spinach.
